SWEET POTATO COOKIES
1/2 c. butter
1 c. brown sugar
1/2 c. milk
1 c. mashed sweet potatoes
2 1/3 c. wheat flour
1 c. antioxidant trail mix (coarsely chopped)
1 egg
1 egg white
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
Mix butter, eggs, sweet potatoes and dry ingredients together, adding milk a little at a time. Add antioxidant trail mix. Drop by the spoonful onto a greased cookie sheet. Bake in a 300-degree oven for 15 minutes or until brown.

1 c. whole wheat flour
1/2 c packed brown sugar
1/2 c canola oil
1 egg  
2 egg whites 
2 teaspoon vanilla extract
1 teaspoon baking soda 
1 1/2 c. oatmeal
1/4 c. almonds (coarsely chopped)
1/4 c. antioxidant trail mix (coarsely chopped)
1/4 c. semi sweet chocolate (coarsely chopped)
1 1/2 c raisins
4 scoops whey protein
Mix dry ingredients and wet ingredients in separate containers. Add wet ingredients to dry ingredients and mix. Drop by the spoonful onto a greased cookie sheet. Bake in a 300-degree oven for 15 minutes or until brown.
